Why shouldn't you freeze un-brewed loose leaf tea? I thought you should keep it in the freezer until the package is open.

I'm new to high quality green tea and I'm not really sure how to store the tea.

Unopened matcha should be stored in the freezer, right? Where should it be stored once it's opened?

Honestly, you shouldn't store any green tea in the freezer, even matcha. The refrigerator would be for unopened bags only (matcha being the exception - you do store that refrigerated after opening.) and after opening the bag, you shouldn't store loose leaf green tea in the refrigerator either. Once you open the bag - the clock starts ticking no matter what you do as the tea is being exposed to oxygen. Since loose leaf green tea has only about 3% moisture, it will soak up refrigerator smells and humidity. Matcha - you are supposed to store that in the refrigerator even after opening, just make sure it's a tight seal. I hear some people leave it out of the refrigerator for a few hours before opening to warm it up and not have it affected by condensation.

You should only store "unopened" bags in the refrigerator. Once you open it, it doesn't really do any good to refrigerate it and can actually do harm because it only has abou 3% moisture content in it and it will absorb moisture like a sponge. Keep in in a dry, cool place - you have about 2 months to drink it once opened.

Well I never froze my tea... I simply pour the contents into a jar after opening the packet once.
