Green Tea Ice Cream (serves 4-6)
Ingredients

1 cup full cream milk

2 tblsp Japanese Green Tea leaves or 8 Green Tea teabags

1/4 cup caster sugar

4 egg yolks

1 cup cream

1 tsp freshly squeezed lime juice

1-2 drops green food colouring

Method
Firstly, place the milk and sugar in a saucepan and bring ingredients to near boiling point. Stir continuously while adding the green tea leaves to the saucepan.

Allow the mixture to cool. preferably overnight in a refrigerator, but for a minimum of 2-3 hours at least. This cooling off period allows the green tea to impart flavour into the mixture.

Once cooled, remove from refrigerator and strain through a very fine sieve to seperate the leaves.

Meanwhile, prepare the four egg yolks by whisking them in a seperate bowl. Re-heat the flavoured milk and pour over the freshly whisked yolks. Gently mix the ingredients together before returning the mix to the saucepan. Once again, stir well to prevent the mixture from boiling.

With gentle heating the ingredients will form a smooth custard. Once the custard coats the back of the spoon, remove the saucepan from the heat and allow to cool.

Once cooled, combine the cream, lime-juice and food colouring to the mixture and stir well. Transfer the mix to an ice cream maker and follow the manufacturer's instructions on churning.

If you do not have an ice cream maker, then freeze the mixture in a small plastic container until it is slightly firm, remove and whisk well.

Replace the mix back into the freezer and repeat the whisking process after 3 hours. Return the mix to the freezer for the final time, and freeze until ready to serve.

Green Tea Doughnuts
Ingredients

7/8 c. cake mix or pancake mix

1 egg

2 tbs. milk

1 tbs. powdered green tea

Sugar or cinnamon sugar

Oil

Method
Begin by heating the oil in a deep fat fryer to about 375 degrees. While the oil heats, melt some butter in a seperate saucepan.

Meanwhile, make a green tea mixture by adding the tea powder into a cup of water.

Follow the packet guidelines for the pancake mix, then add the egg, milk, butter and green tea and whisk until smooth.

Roll out the dough with a rolling pin until about 1/4 inch thick. Cut out small circles and roll into balls. Fry the dough balls for 2-3 minutes in the deep fat fryer, or until golden brown.

Remove excess oil by draining on paper towels, then sprinkle with ordinary sugar or cinnamon.

well the ice cream was a little less on sugar... I am ot commenting on the recipe but may it felt because I consume more sugar but the doughnuts turned aout to be delicious.. I give it an A+

I had a question in mind... Can these sweets be only prepared using green tea? or can I use coffee or any other type of tea also?

I dont know about the other teas.. but one can definitely substitute coffee for the tea...
