I believe white tea is grown in the shade so that the leaves remain a pale green color. It is made from young leaves and shoots (first flush? - I'm not sure of that...)

It's supposed to be higher in catechins than green tea so it is popular among the "tea for health" crowd. I've never tried it so I can't tell you how it tastes.

I've searched something about white tea,,, according to it white tea is the rarest and most delicate of tea. White tea represents the least processed form of tea. Unlike black and green teas, white tea is simply air dried in natural sunlight, this preserves more of its antioxidant properties. About three times as many antioxidant polyphenois as the green tea. Drinking white tea besides being more beneficial is a lot more palatable than green tea.

Now I just have to find it at the super stores

The white teas produced today are not steamed, a common misconception, but are withered and then carefully hand selected to be baked dry. The unique shape, color and fragrance of these teas are due to the withering process and the tea masters ability to balance outdoor and indoor withering. When buying white teas, price should be only one consideration.
