I know a lot of members must be waiting for this.. Here I am with a few tea recipes

Chai Cheese Cake

6 tsp. Masala Chai Tea
2 (8 oz) cream cheese, softened
1 egg
1/2 cup water
1/2 cup sugar
1 (6 oz or 9 inch) graham cracker pie crust

Place the Masala Chai Tea in a cup with 1/2 cup boiling water. Steep the tea for 5 - 7 minutes. Strain the tea leaves. In a large bowl, combine the concentrate of Chai tea, cream cheese and sugar. Blend well with an electric mixer. Add eggs and mix again until blended smooth. Pour mix into piecrust. Bake at 350ºF for 40 minutes. Cool in refrigerator approx. 3 hours or overnight.

Spicy Tea Cake

Cake

2 tsp. Rooibos
1/2 cup water
2 cups cake flour
1 1/4 Tbsp. baking powder
1/2 tsp. salt
1/4 tsp. ground nutmeg
1/3 cup sugar
1/2 cup milk
1/4 cup butter or margarine, melted

Topping
1/4 cup brown sugar
1/4 cup coconut
1/4 cup cake flour
1 tsp. ground nutmeg
1/4 tsp. salt
1/4 cup butter or margarine, melted

Preheat oven to 400°F. Bring the water to a boil, add the rooibos and steep for 5 minutes. Strain the rooibos leaves. Set aside the rooibos mixture. Sift all dry ingredients together. Add rooibos mixture, milk and butter or margarine. Mix well. Turn into greased cake tin.

Topping
Combine ingredients and sprinkle over cake.

Bake in center of oven for 30 minutes and serve hot.

Meringue Tea

Meringue
2 egg whites
1 tsp. sugar

Lemon Syrup
2 Tbsp. sugar
1 tsp. concentrated lemon juice

Lemonade Tea
Juice of 1 lemon, strained (approximately 2 - 3 tsp.)
3/4 cup boiling water
Sugar to taste (approximately 2 tsp.)
1 tsp. black tea leaves

Lemonade Tea
Stir the lemon juice, water and sugar together until the sugar dissolves. Place the tea leaves in a teapot. Pour the hot lemonade over the tea leaves and let steep for 5 minutes. Strain the tea leaves.

Meringue
Make the meringue by beating the egg whites with 1 tsp. sugar until stiff peaks form.

Pour the hot lemonade tea into an oven-proof cup. Pile the tea high with meringue and place the cup in the oven under the broiler. Leave the cup under the broiler for 3 minutes or until the meringue browns lightly.

Lemon Syrup
While the meringue is browning in the oven, make a small amount of lemon syrup in a saucepan by heating the 2 Tbsp. sugar and the concentrated lemon juice until the sugar dissolves and the mixture is transparent and smooth.

Drizzle the lemon syrup over the browned meringue. Serve with a spoon.

Note 1: The cup has come from the over and may be hot to the hands and lips. Use caution when serving and sipping.

Note 2: You can use Lemon Curd in place of the lemon syrup. Just heat it in the microwave and drizzle it on the browned meringue.

I decided to try out the recipe before posting a message. Cakes ae my all time favourites and this masala chai cheese cake turned out to be simply superb.. I'd definitely recommend it to everyone..

Thank you all for liking these recipes.. I've tried these ones myself.. I have a few others also.. but I'll try them in a few days and post them after that..
