Meringue Tea
Meringue 2 egg whites 1 tsp. sugar
Lemon Syrup 2 Tbsp. sugar 1 tsp. concentrated lemon juice
Lemonade Tea Juice of 1 lemon, strained (approximately 2 - 3 tsp.) 3/4 cup boiling water Sugar to taste (approximately 2 tsp.) 1 tsp. black tea leaves
Lemonade Tea Stir the lemon juice, water and sugar together until the sugar dissolves. Place the tea leaves in a teapot. Pour the hot lemonade over the tea leaves and let steep for 5 minutes. Strain the tea leaves.
Meringue Make the meringue by beating the egg whites with 1 tsp. sugar until stiff peaks form.
Pour the hot lemonade tea into an oven-proof cup. Pile the tea high with meringue and place the cup in the oven under the broiler. Leave the cup under the broiler for 3 minutes or until the meringue browns lightly.
Lemon Syrup While the meringue is browning in the oven, make a small amount of lemon syrup in a saucepan by heating the 2 Tbsp. sugar and the concentrated lemon juice until the sugar dissolves and the mixture is transparent and smooth.
Drizzle the lemon syrup over the browned meringue. Serve with a spoon.
Note 1: The cup has come from the over and may be hot to the hands and lips. Use caution when serving and sipping.
Note 2: You can use Lemon Curd in place of the lemon syrup. Just heat it in the microwave and drizzle it on the browned meringue.
